Shepherd’s Pie

Ingredients:

  • 3 cups mashed potato flakes (prepared as per package directions)

  • 1 pound ground beef

  • 1 medium onion, chopped

  • 1 can (14.5 ounces) diced tomatoes, undrained

  • 1 can (11 ounces) Mexicorn, drained

  • 1 can (2.25 ounces) sliced ripe olives, drained

  • 1 packet taco seasoning

  • 1 ½ teaspoons chili powder

  • ½ teaspoon salt

  • ⅛ teaspoon garlic powder

  • 1 cup shredded cheddar cheese, divided

Instructions:

Step 1: Prepare Mashed Potatoes

Follow the package directions to prepare mashed potatoes and set them aside.

Step 2: Cook the Beef Mixture

In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and no longer pink. Drain excess fat.

Step 3: Combine Ingredients

Add diced tomatoes, drained Mexicorn, sliced olives, taco seasoning, chili powder, salt, and garlic powder to the skillet. Stir well and bring the mixture to a boil. Simmer for 1-2 minutes.

Step 4: Assemble the Shepherd’s Pie

Transfer the beef mixture to a greased 2.5-quart baking dish. Sprinkle ¾ cup of shredded cheddar cheese over the top. Spread the prepared mashed potatoes evenly over the mixture, then sprinkle the remaining cheese on top.

Step 5: Bake and Serve

Preheat oven to 350°F (175°C). Bake uncovered for 12-15 minutes or until the cheese is melted and bubbly. Serve warm and enjoy!
