Ingredients
On a kitchen counter, shrimp, asparagus, angel hair pasta, tomatoes, and other items are arranged. Home Sweet Home Shrimp: This recipe calls for fresh, uncooked shrimp, though you may substitute precooked shrimp for convenience. Prepare to peel, devein, and clean any kind of shrimp you can find in the grocery store. Asparagus: Fresh asparagus is most delicious in-season, though it’s getting easier to find in supermarkets all year round. Look for springy stalks that snap, and stay away from rubbery or bendable stalks. When it comes to thick or thin asparagus, it just comes down to personal preference. Make sure to thoroughly clean the asparagus when you get home to remove any grit. Angel hair pasta: Light sauces like this one go well with delicate angel hair pasta. Linguine, bucatini, and spaghetti would all work well. Tomato: A freshly chopped and seeded tomato adds flavor and moisture to the delicate pasta sauce. The recipe calls for peeling the tomato first, which eliminates tough, chewy tomato skins from the sauce. Alternatively, you may use a canned whole peeled tomato, simply chop it up before adding it to the recipe.
Olive oil: Using olive oil to cook the shrimp and sauce adds flavor and richness. You can use any kind of olive oil, including regular olive oil and extra virgin olive oil. While extra virgin olive oil tastes best, its subtle flavor is lost a bit in the cooking process.
Garlic: Despite the fact that this sauce has a relatively mild flavor, it calls for four cloves of garlic. These cloves give the sauce a zingy, aromatic background that works well with the shrimp and vegetables. If you like garlic, add as much as you want. In a pinch, you can substitute salt or garlic powder, but the flavor won’t be as delicate. Fresh herbs: This recipe is generously flavored with herbs. Basil and parsley add fresh, bright flavor, while oregano and thyme are earthier and more savory. In the summer, using all four might be no problem, especially if you grow your own herbs. You could substitute dried oregano and thyme for one fresh, bright herb like basil or parsley if you can’t or don’t want to use them all.
