Shrimp Scampi recipe

Ingredients:

  • Linguine: Long, flat pasta is ideal, but any pasta can work. High-quality Italian brands are recommended.

  • Spices: Red pepper flakes, salt, pepper, and sliced garlic cloves (use freshly ground black pepper for best flavor).

  • Butter: Either salted or unsalted; use high-quality butter as it’s key to the sauce.

  • Olive Oil: Extra virgin olive oil (EVOO) for added flavor and health benefits.

  • Shrimp: Fresh or frozen, pink, brown, or white shrimp. Use large shrimp (16/20 count per pound). Clean and devein if necessary.

  • White Wine: Dry, crisp white wines like Pinot Grigio, Sauvignon Blanc, or unoaked Chardonnay. For a non-alcoholic option, substitute with extra lemon juice.

  • Lemon: Use both lemon juice and zest for a bright, citrusy flavor.

  • Parmesan: Authentic Parmigiano-Reggiano is ideal, but a good Parmesan wedge works well. Avoid pre-grated cheese.

  • Parsley: Flat-leaf parsley is preferred, but any fresh parsley can be used.


Instructions:

Step 1: Cook the Pasta

  • Boil salted water and cook the pasta according to package directions until al dente.

  • Drain and set aside.

  • Tip: Al dente pasta should be tender but firm and chewy when bitten.

Step 2: Cook the Shrimp

  • In a large saucepan, heat butter and olive oil over medium heat.

  • Add minced garlic and red pepper flakes, stirring constantly for 1-2 minutes until garlic turns golden.

  • Add shrimp and cook for 2-3 minutes until pink.

  • Using a slotted spoon, transfer shrimp to a plate and keep warm.

  • Tip: Garlic burns easily, so ensure shrimp are added as soon as garlic is cooked.

Step 3: Make the Sauce

  • If using wine, add it to the pan along with lemon juice, lemon zest, salt, and pepper.

  • Reduce heat and let it simmer uncovered for 5-7 minutes until slightly thickened.

  • Tip: Zest the lemon before juicing to retain essential citrus oils and avoid the bitter white pith.

Step 4: Toss Everything Together

  • Add cooked pasta, shrimp, Parmesan, and parsley to the pan.

  • Toss everything together until well-coated and heated through.

  • Remove from heat and serve immediately.
