Spinach Sausage Pasta Recipe

Ingredients

1 lb Italian sausage (fresh pork sausage, preferably seasoned with fennel or anise)

1 medium onion, chopped (sweet or yellow onion recommended)

3 garlic cloves, minced

2 tbsp olive oil (extra virgin for enhanced flavor, or refined for a milder taste)

3 cups chicken broth (adds savory depth to the dish)

8 oz angel hair pasta (delicate pasta ideal for brothy sauces)

4 cups fresh spinach, roughly chopped (can substitute with kale or arugula)

2 tbsp all-purpose flour (helps thicken the sauce)

½ tsp black pepper, freshly cracked

½ cup heavy whipping cream (adds richness and a creamy texture)

Instructions

Step 1: Brown the Sausage

1.Heat olive oil in a large pot or Dutch oven over medium heat.

2.Add the Italian sausage, breaking it into crumbles as it cooks.

3.Stir in the chopped onion and garlic. Cook until the sausage is browned and no longer pink.

4.Drain excess fat if necessary.

Step 2: Cook the Pasta

1.Pour the chicken broth into the pot with the cooked sausage.

2.Bring to a boil and add the angel hair pasta.

3.Stir frequently and cook for about 3 minutes until the pasta softens.

Step 3: Add Spinach and Sauce

1.Gradually add the spinach, stirring continuously until it wilts (about 2-3 minutes).

2.In a small bowl, whisk together the all-purpose flour, black pepper, and heavy cream until smooth.

3.Slowly pour the mixture into the pot while stirring.

4.Bring the sauce to a light boil and cook for another 1-2 minutes until it thickens.

Step 4: Serve and Enjoy

•Remove from heat and let the pasta sit for a minute to absorb the flavors.

•Serve hot and garnish with grated Parmesan cheese if desired.
