Fried Lemon Fish Recipe
Ingredients
•1 cup all-purpose flour (for coating and batter)
•1 tsp baking powder (adds lightness and crispiness)
•1 tbsp sugar (balances the tanginess of lemon)
• ½ tsp salt
• 1 large egg
• ⅔ cup water
•⅔ cup fresh lemon juice, divided (for batter and coating)
•4 walleye or perch fillets (or any white, flaky fish)
•Vegetable oil, for frying (enough to fill 1 inch in the pan)
•Lemon wedges, for serving (optional)
Instructions
Step 1: Prepare the Batter
1. In a mixing bowl, whisk together 1 cup flour, baking powder, salt, and sugar.
2. In a separate bowl, whisk the egg, water, and ⅓ cup of lemon juice.
3. Gradually add the wet mixture to the dry ingredients, stirring until the batter is smooth.
Step 2: Coat the Fish
1. Set up two shallow bowls: one with the remaining ⅓ cup of lemon juice and another with a little extra flour.
2. Dip each fish fillet into the lemon juice, then into the flour, and finally coat it evenly with the prepared batter.
Step 3: Fry the Fish
1. Heat 1 inch of vegetable oil in a large skillet over medium-high heat.
2. Fry the fillets for 2-3 minutes per side (or 4-6 minutes total) until golden brown and crisp.
3. Transfer to a plate lined with paper towels to drain excess oil.
Step 4: Serve and Enjoy
